Salmon Bites with Rice and Broccoli

Enjoy a nutritious and flavourful meal with these Salmon Bites served alongside rice and steamed broccoli, drizzled with a tangy peanut dressing. This dish is quick to prepare, balanced in macros, and perfect for a wholesome lunch or dinner. Paired with a refreshing mixed berry collagen drink, it’s a satisfying way to fuel your day with both flavour and nourishment.
Ingredients:
- 150g salmon fillet, cut into cubes
 - 1/2 tsp minced garlic
 - 2 tsp lemon juice
 - Salt and pepper, to taste
 - 1/2 head of broccoli, florets
 - 1/2 cup cooked rice, to serve
 - 2 scoop Mixed Berry Premium Collagen Peptides drink
 - 1 glass cold water
 
Peanut Dressing:
- 1 tsp peanut butter
 - 1 tbsp sweet chili sauce
 - 1 tbsp lemon juice
 - 1/2 tsp minced garlic
 - 1 tsp soy sauce
 
Method
- Add the salmon to a mixing bowl and season with garlic, lemon juice, salt, and pepper. Toss to combine.
 - Add the salmon to the air fryer basket and air fry at 180°C for 6-8 minutes.
 - Meanwhile, steam the broccoli and prepare the peanut dressing by whisking all the dressing ingredients together in a small bowl.
 - Add the collagen to a glass of cold water and stir to dissolve.
 - In a serving bowl, add the rice, steamed broccoli, and cooked salmon. Drizzle with the peanut sauce.
 - Serve with the collagen drink and enjoy!
