Mango coconut oatmeal bars

These Mango Coconut Oatmeal Bars are soft, naturally sweet, and packed with tropical flavour in every bite. Made in one bowl with wholesome ingredients, they're flourless, refined sugar-free, and easy to make dairy-free, making them the perfect grab-and-go breakfast, snack, or healthy treat.
Ingredients
- 2 cups rolled oats
- 1 heaped cup (300g) Greek yoghurt or coconut yoghurt
- ½ cup nut butter of choice
- 1 large egg
- ¼ cup milk of choice
- 2 tsp vanilla extract
- 1 sachet Passionfruit Mango Collagen
- 2 tsp baking powder
- 1 cup frozen mango, chopped
- ⅓ cup shredded coconut, plus extra for topping
- Optional: white chocolate, melted, for drizzling

Prepare the pan
Preheat the oven to 160°C fan-forced. Line a baking pan or slice tin with baking paper. -
Mix the batter
In a large bowl, combine the oats, yoghurt, nut butter, egg, milk, vanilla extract, collagen, and baking powder. Stir until well combined. -
Add the mix-ins
Fold through the chopped mango and shredded coconut until evenly distributed. -
Bake
Pour the mixture into the prepared pan and spread evenly. Sprinkle with extra shredded coconut. Bake for 30-35 minutes, or until lightly golden and set in the centre. -
Cool and serve
Allow to cool completely before slicing into bars. If desired, drizzle with melted white chocolate before serving.
Storage: Store in an airtight container in the fridge for up to 5 days.
