High-protein Egg Muffins

A simple, high-protein breakfast option that’s easy to prep ahead. These fluffy egg muffins are packed with bacon, veggies, and melted cheese for a satisfying, low-carb start to the day. Pair with a Hydraglow drink on the side for a fresh, balanced morning setup.

Ingredients (makes 6 muffins)

  • ½ capsicum, diced

  • ½ zucchini, diced

  • 60g shortcut bacon, diced

  • 10 eggs

  • 60g light cheese, shredded

  • 2 tbsp spring onions, sliced

Method

  1. Preheat oven to 180°C and lightly grease or line a muffin tray.

  2. Evenly divide the diced capsicum, zucchini, bacon, and spring onions between each muffin hole.

  3. In a bowl, whisk the eggs until well combined. Season with salt and pepper if desired.

  4. Pour the egg mixture over the fillings in each muffin hole, filling to about ¾ full.

  5. Sprinkle the shredded cheese evenly over the top of each muffin.

  6. Bake for 18–22 minutes, or until the muffins are set and lightly golden on top.

  7. Allow to cool slightly before removing from the tray.
