Mango Cheesecake

Creamy, fruity, and packed with protein, this Mango Cheesecake is a refreshing twist on a classic dessert. Made with protein yoghurt, light cream cheese, juicy mango, and Mango Weiss Glow Powder, it's the perfect make-ahead treat for a nourishing snack or lighter dessert.

Serves 9 

Ingredients 

  • 3 large eggs
  • 250g protein yoghurt
  • 250g light cream cheese
  • 300g frozen mango, defrosted and drained
  • 2 scoops mango Weiss Glow Powder

Method

  1. Preheat the oven to 160°C and line a square baking pan with baking paper.
  2. Add all ingredients to a high-speed blender in the order listed. Blend on high for 30 seconds, or until smooth and creamy.
  3. Pour the batter into the prepared baking pan and gently tap the pan on the bench to remove any air bubbles. Bake for 50 minutes, or until lightly golden and just set in the centre.
  4. Allow the cheesecake to cool completely, then transfer to the fridge to set overnight. Slice and serve with diced mango and coconut flakes.
