Refined Sugar Free
Ingredients (makes 15)
- 1 10g Packet Dry Yeast
- 1/4 Cup Very Warm Water
- 1 Cup Milk (warmed)
- 1/4 Cup Butter (melted)
- 2 Eggs (lightly beaten)
- 5 Cups White Bread Flour
- 1 tsp Salt
- 3 tsp Ground Cinnamon
- 1 tsp Ground Nutmeg
- 2 tsp Mixed Spice
- 1 tsp Ground Ginger
- 2 1/2 Tbsp Coconut Sugar
- 2-3 Scoops Unflavoured Premium Collagen Peptides
- 1 Cup Soft Caramels (chopped)
White crosses
- 2 1/2 Tbsp Plain Flour
- 6 Tbsp Water
Method
- Sprinkle yeast into a measuring cup with warm water. Stir until yeast dissolves. Set aside. To a bowl, add the warm milk and butter. Stir until melted. Once cool, add in eggs. Stir again. Set aside.
- Sieve flour into a large bowl, mix in salt, spices, coconut sugar, collagen and soft caramel chunks. Make a well in the centre of the flour. Pour in the yeast mixture and the butter mixture. Mix in with a metal fork until a soft dough forms. If too sticky add a little more flour.
- Place in a greased mixing bowl with a damp cloth over the top. Allow to rise until doubled in size.
- On a lightly floured surface divide the dough into 15 equal pieces. Roll into balls. Cover again with a damp cloth and let the buns rise until they double in size.
- Meanwhile, mix together the plain flour and water for the crosses until you have a thick paste. Using a piping bag, carefully draw a cross onto each bun. Preheat oven to 200C. Bake buns for approximately 15 mins or until golden brown. Brush with butter or honey. Enjoy!
