Makes 16 cookies
Ingredients:
- ½ cup almond flour
- 2 tbsp flaxseed meal
- 2 scoops Collagen Co Glow Shake
- ¼ cup plain flour (plus extra for rolling)
- 1 small egg (or ½ large egg, beaten)
- 1 ½ tbsp sugar-free maple syrup
- 25 g butter, melted
- 1 tbsp brown sugar (or coconut sugar)
- 1 tsp cinnamon
- ¼ tsp ginger (or ½ tsp if you like it spicy!)
- ¼ tsp nutmeg
- ½ tsp baking powder
- Dash of warm water, if needed
Directions:
- Preheat oven to 160°C fan-forced. Line a baking tray with baking paper.
- In a mixing bowl, combine all dry ingredients (almond flour, flaxseed meal, Collagen Co Glow Shake, plain flour, spices, baking powder).
- Add wet ingredients (egg, melted butter, sugar-free maple syrup, brown sugar) and mix until a dough forms. Add a dash of warm water if the dough is too crumbly.
- Roll dough between two sheets of baking paper, lightly dusted with flour to prevent sticking.
- Cut into small gingerbread shapes (~16 cookies).
- Bake for 12–15 minutes, or until lightly golden around the edges. Keep an eye on them — ovens vary!
Optional: Decorate with frosting or icing (I used ready-to-go icing from Coles/Woolworths).
