This Stuffed Turkey Breast with Cranberry is a lighter, festive take on a Thanksgiving favourite. Filled with creamy brie and sweet cranberry sauce, then baked until golden, it delivers all the holiday flavour in a balanced, high-protein meal. Paired with roasted potatoes and steamed green beans, it’s a comforting, wholesome dish perfect for a seasonal dinner without the heaviness of a traditional roast.
Ingredients (Serves 2)
- 300g turkey breasts
- 50g brie cheese
- 50g cranberry sauce
- 1 Egg and 50g panko bread crumbs and 1 tsp mixed herbs (to coat the stuffed turkey)
- 200g Potatoes, roasted
- 100g Green beans, steamed
Method:

Preheat oven to 180°C / 350°F.

Prepare the turkey: Slice a pocket into each turkey breast. Stuff with brie cheese and cranberry sauce.

Coat the turkey: Beat the egg in a small bowl, then dip the stuffed turkey breasts in egg and coat with panko breadcrumbs.

Cook the turkey: Heat a small splash of oil in an oven-safe pan over medium heat. Sear the stuffed turkey on all sides until golden, then transfer to the oven and bake for 15–20 minutes, or until cooked through.

Prepare sides: While turkey cooks, roast or boil the potatoes until tender and steam the green beans.

Serve: Slice the stuffed turkey and serve with potatoes and green beans. Optional: drizzle with extra cranberry sauce or sprinkle with fresh herbs.
