Ingredients (Serves 1)
- 180g skinless chicken breast, cubed
- 1/2 tsp paprika
- 1/4 tsp garlic powder
- Salt + pepper, to taste
- ½- 1 cup cooked jasmine rice
- Handful rocket
- ¼ cup finely diced tomato
- ¼ cup finely diced cucumber
- 5 Kalamata olives, sliced
- ¼ cup feta, crumbled
- 1 tbsp finely chopped red onion
- 1/4 cup tzatziki
- Fresh parsley for garnish
- Drink: 2 scoop Purple Grape Premium Collagen Peptides + water
Method:
- Toss the chicken in the seasonings.
- Spray a pan on medium-high heat with olive oil and cook the chicken cubes for 2-3 minutes on each side or until browned.
- Meanwhile, dissolve 1 scoop of Purple Grape Collagen in a large glass of water and stir.
To a bowl, add the cooked rice, a handful of rocket, the cooked chicken, chopped veggies, olives, parsley, and top with tzatziki. Enjoy!
