Ingredients (Serves 1)

  • 180g skinless chicken breast, cubed
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • Salt + pepper, to taste
  • ½- 1 cup cooked jasmine rice
  • Handful rocket
  • ¼ cup finely diced tomato
  • ¼ cup finely diced cucumber
  • 5 Kalamata olives, sliced
  • ¼ cup feta, crumbled
  • 1 tbsp finely chopped red onion
  • 1/4 cup tzatziki
  • Fresh parsley for garnish
  • Drink2 scoop Purple Grape Premium Collagen Peptides + water

Method:

  1. Toss the chicken in the seasonings.
  2. Spray a pan on medium-high heat with olive oil and cook the chicken cubes for 2-3 minutes on each side or until browned.
  3. Meanwhile, dissolve 1 scoop of Purple Grape Collagen in a large glass of water and stir.

To a bowl, add the cooked rice, a handful of rocket, the cooked chicken, chopped veggies, olives, parsley, and top with tzatziki. Enjoy!
