This quick and easy BBQ chicken pizza recipe serves 2 and is perfect for a tasty weeknight meal. With a high-protein base topped with veggies, tender chicken, and gooey mozzarella, it's both satisfying and nutritious. Pair it with a refreshing watermelon collagen drink for a complete, balanced dinner.
Serves 2
1 high protein pizza base
3 tbsp sugar free BBQ sauce
1 handful chopped baby spinach
1/4 red onion, sliced
1/4 red capsicum, thinly sliced
75g shredded cooked chicken breast
1/2 cup light mozzarella, grated
Collagen drink:
2 scoop watermelon collagen + 1 glass cold water
Method:
- Preheat the oven to 180°C and place the pizza base on a round pizza tray.
- Spread with the sauce, then top with spinach, onion, capsicum, chicken, and finish with the cheese. Bake for 12 minutes.
- Meanwhile, add the collagen to a glass of cold water and stir to dissolve.
