Grilled juicy peaches meet creamy cottage cheese, salty prosciutto, and a drizzle of warm chilli-infused honey, all on a golden slice of sourdough. Finished with red onion, basil, and cracked black pepper, it's the ultimate balance of comfort and sophistication – ready in minutes and just ~285 calories per serve.

Ingredients (Makes 1 serve)1 slice sourdough bread (40g)
- 1 small ripe peach, sliced into wedges (90g)
- 1 tsp olive oil
- 3 tbsp low-fat cottage cheese (60g)
- 30g prosciutto
- Red onion, finely sliced (to taste)
- 1 tsp honey
- Pinch of chilli flakes
- Fresh basil leaves
- Cracked black pepper
Method:
- Prepare the peach: Slice the peach into wedges and toss with 1 tsp olive oil and a good crack of black pepper.
- Grill the peach: Sear the peach slices in a hot pan for 1–2 minutes per side until lightly charred.
- Toast the bread: While the peaches are cooking, toast the sourdough to your liking.
- Assemble: Spread the cottage cheese generously over the toasted sourdough. Layer on the prosciutto, followed by finely sliced red onion and basil.
- Top with peaches: Add the warm grilled peach slices on top.
- Finish: Warm the honey slightly and mix in a pinch of chilli flakes. Drizzle over the toast.
