Chicken Stuffed Sweet Potatoes

Hearty, high-protein, and full of flavor, these Chicken Stuffed Sweet Potatoes are a deliciously balanced way to fuel your day. Topped with creamy yogurt sauce, zesty corn, and a side of Tropical Beauty Greens—they’re comfort food with benefits.
Serves 2
- 2 medium sweet potatoes
 - 350g skinless chicken breast, cubed
 - 1 tsp garlic powder
 - 1 tsp onion powder
 - 1 tsp smoked paprika
 - ½ tsp salt
 - Olive oil spray
 
Green Yogurt Sauce
- ½ cup plain yogurt
 - ¼ cup fresh coriander (plus more to serve)
 - 1 garlic clove
 - Juice of ½ lemon
 - Pinch of salt
 
Toppings
- 2 tbsp cottage cheese
 - ½ cup corn (fresh or thawed if frozen)
 - ½ tsp sumac
 - 25g sharp cheddar cheese, grated
 
To Serve
- 2 serves Tropical Beauty Green Powder
 - 2 glasses water
 
Method
- 
Pierce sweet potatoes with a fork and air fry at 180°C for 45 minutes, turning every 10 minutes, until tender.
 - 
Toss chicken with olive oil, garlic powder, onion powder, paprika, and salt. Sauté over medium-low heat for 3–4 minutes each side until cooked through.
 - 
Blend yogurt, coriander, garlic, lemon juice, and salt until smooth.
 - 
Combine corn, cottage cheese, and sumac in a bowl.
 - 
Stir 1 serve of green powder into each glass of water.
 - 
Slice open sweet potatoes, fluff the insides, and add cheddar. Top with chicken and corn mix. Drizzle with yogurt sauce and garnish with coriander.
