Air Fryer Churros

Gluten Free | Sugar Free Option | Lower in fat | High Protein
Ingredients:
1 cup water
80g unsalted butter (or vegan butter)
2 tbsp coconut sugar or monk fruit sweetener
1/2 tsp salt
1 cup gluten free flour
2 scoops unflavoured collagen
2 eggs
Cinnamon sugar:
1 scoop unflavoured collagen
1/4 cup coconut sugar or monk fruit 1 teaspoon cinnamon
Method:
1. In a medium saucepan add water, butter, sugar, and salt. Bring to a boil over medium-high heat.
2. Reduce heat to medium-low, add the flour and collagen to the saucepan. Stirring constantly with a rubber spatula cook until the dough comes together and is smooth.
3. Remove from heat and transfer the dough to a mixing bowl.
4. Add eggs one at a time until a soft dough comes together. Transfer to a large
piping bag fitted with a large star-shaped tip.
5. Pipe churros into a greased air fryer basket, into 10cm lengths. Air fry at 190C for
12-15 minutes, cooking in batches.
6. In a shallow bowl combine sweetener, collagen and cinnamon.
7. Immediately transfer cooked churros to the bowl with the sugar mixture and toss
to coat. Serve warm with chocolate dipping sauce.
