Air Fryer Churros

Ingredients:
- 1 cup water
- 80g unsalted butter (or vegan butter)
- 2 tbsp coconut sugar or monk fruit sweetener
- 1/2 tsp salt
- 1 cup gluten free flour
- 2 scoops of Unflavoured Premium Collagen Peptides
- 2 eggs
Cinnamon sugar
- 1 scoop Unflavoured Premium Collagen Peptides
- 1/4 cup coconut sugar or monk fruit 1 teaspoon cinnamon
Method
- In a medium saucepan add water, butter, sugar, and salt. Bring to a boil over medium-high heat.
- Reduce heat to medium-low, add the flour and collagen to the saucepan. Stirring constantly with a rubber spatula cook until the dough comes together and is smooth.
- Remove from heat and transfer the dough to a mixing bowl.
- Add eggs one at a time until a soft dough comes together. Transfer to a large piping bag fitted with a large star-shaped tip.
- Pipe churros into a greased air fryer basket, into 10cm lengths. Air fry at 190C for 12-15 minutes, cooking in batches.
- In a shallow bowl combine sweetener, collagen and cinnamon.
- Immediately transfer cooked churros to the bowl with the sugar mixture and toss to coat. Serve warm with chocolate dipping sauce.
