Easy Tuna Cucumber Sushi Rolls - The Collagen Co.

A simple yet delicious recipe that combines the freshness of tuna, crisp cucumber, and creamy avocado. Ingredients (Serves 2)

  • 1 cup cooked sushi/white rice
  • 2 tbsp sushi seasoning
  • 185g can tuna in spring water, drained
  • 2 sheets nori
  • 2 tbsp plain Greek yogurt or Kewpie mayonnaise
  • 2 tsp sriracha
  • 1/2 small avocado, sliced into strips
  • 1 Lebanese cucumber, cut into strips
  • Soy sauce, to serve

To serve: 2 scoops of Strawberry Watermelon Premium Collagen Peptides + 2 glasses of water, each

Method

  1. In a bowl, combine the rice and sushi seasoning.
  2. Place tuna, yogurt, and sriracha in a bowl. Mix until well combined.
  3. Place 1 nori sheet, shiny-side down, on a sushi mat or board. Leaving a 2cm strip at the edge furthest away from you, firmly press 1/2 of sushi rice evenly over nori using damp hands. Spread over 1/2 of the tuna along the end closest to you. Top with avocado slices and cucumber.
  4. Lightly brush the nori strip with cold water. Using your hands, roll up firmly to form a tight roll. Gently press to seal. Using a very sharp knife, slice on the diagonal into 4-6 pieces. Repeat with the remaining ingredients and serve with soy sauce.
  5. Mix 1 scoop of Strawberry Watermelon Premium Collagen Peptides with 1 glass of water per person. And enjoy!
