BBQ Corn Ribs

Crispy, smoky, and a little bit cheeky — these BBQ corn ribs are the ultimate crowd-pleasing snack or side. With golden edges, a tangy-sweet yoghurt sauce, and a sprinkle of parmesan and chives, they’re bursting with flavour in every bite. Pair them with a chilled can of Beautiful Energy for the perfect balance of zest and refreshment.

Ingredients (Serves 4)

  • 2 corn cobs
  • 2 tbsp olive oil 
  • 1 tbsp BBQ seasoning
  • ½ tsp salt

Sauce

  • 2 tbsp Greek yoghurt (low-fat or regular)
  • 2 tsp sriracha
  • 2 tsp lime juice
  • 1 tsp sugar or honey
  • Pinch of salt

To Serve

  • 10 g parmesan cheese, finely grated

  • Chopped chives

  • Beautiful Energy on the side (any flavour)

Method

  1. Preheat oven to 180 °C.
  2. Cut the corninto quarters lengthways.
  3. Season: In a bowl, mix olive oil, BBQ seasoning, and salt. Brush or toss the corn pieces evenly with the mixture.
  4. Bake: Arrange corn ribs on a lined baking tray and roast for 25–30 minutes, turning halfway, until golden and curled slightly.
  5. Prepare sauce: Combine yoghurt, sriracha, lime juice, sugar, and salt in a small bowl.
  6. Serve: Drizzle the sauce over baked corn ribs or serve it on the side. Top with parmesan and chives.
  7. Enjoy with your Beautiful Energy drink on the side
