Banana Poppyseed Bread

Light, moist, and packed with protein—this Banana Poppyseed Bread is the perfect balance of sweet, zesty, and nourishing! Made with our Banana Glow Powder, almond meal, and a hint of lemon, it’s a deliciously wholesome twist on a classic. Pair it with the creamy banana butter spread for an extra boost of flavour and collagen goodness.
Ingredients (serves 8)
- 3 medium (285g) ripe bananas, mashed
- 1 large egg
- 3 tbsp lemon juice
- 1 tsp lemon zest
- 4 scoops banana glow powder
- 1 1/2 cups almond meal
- 2 tbsp poppyseeds
- 2 tsp baking powder
- Optional Banana Butter Spread: 1 scoop banana glow powder 2-3 tbsp water
Method
- Preheat the oven to 150°C (fan-forced) and line a small loaf pan with baking paper.
- In a large bowl, whisk together the mashed banana, egg, lemon juice, and lemon zest.
- Add the banana glow powder, almond meal, poppyseeds, and baking powder. Stir to combine.
- Pour the batter into the prepared loaf pan and bake for 1 hour or until a toothpick comes out clean.
- For the banana butter spread, mix the banana glow powder with water in a small bowl until smooth and creamy, adding more water if needed. Serve the bread with the spread if desired, and enjoy!
